      Summer sausage is typically a semi-dry, cured, fermented and smoked sausage that could be considered a fairly close relative of pepperoni. It is packed into a dark fibrous casing. Excellent for venison summer sausage. Spices include black pepper, mustard, nutmeg, and garlic.

      This package will make 25 lbs of Summer Sausage. Sodium erythorbate (Mixed into the seasoning blend) and the packet of curing salt are included. Recipe can be found in our Recipes section online.
